In 2017, driven by his passion, he founded Sanibel Fresh, and the following year, he proudly built and opened MudBugs Cajun Kitchen, adding to the vibrant dining scene of the Island.
Beyond his professional endeavors, Troy is deeply invested in the cultural heritage of Sanibel Island, serving as a valued member of the Sanibel Historical Preservation Committee.
